Since the coronavirus COVID-19 pandemic has pretty much everyone stuck at home, it’s the perfect opportunity to try new recipes for delicious and healthy protein pancakes!
Firstly, maybe you already enjoy protein-rich pancakes daily by adding a scoop or two of your favourite protein to your traditional pancake batter. However, if you love to try new recipes – and with more time on your hands – you may even want to experiment, here are delicious, healthy ideas for protein-rich pancakes (and a few vegan-friendly too)!
🥞 CLASSIC PANCAKES
1 (100 g) cup oats
4 egg whites
4 tsp baking powder
A pinch of salt
A pinch of cinnamon
1–2 scoops Pepto Whey Protein
2 tbsp flax meal (or favourite flour)
Add all ingredients to the blender and blend on high until smooth consistency. Cook over medium-high heat. Serve with pecans, maple syrup or Protein Spread.
Separate egg yolks from whites, beat egg whites until they form soft peaks. Mix egg yolks with other ingredients until smooth. Gently and gradually mix egg whites with banana batter until roughly combined. Cook over low heat. Serve with maple syrup or Protein Spread.
🔵 EASY BLUEBERRY PANCAKES
4 egg whites
1 scoop Pepto Whey Protein
½ (50 g) cup oatmeal, cooked
½ (70 g) cup blueberries
2 tsp baking powder
Mix all ingredients in the blender, except blueberries. Add mixture to the greased heated pan, pour the batter. Sprinkle blueberries on the raw side. Cook over medium heat. Serve with maple syrup or Protein Spread.
🍠 SWEET POTATO PANCAKES
1 large sweet potato
6-8 egg whites
1-2 scoops Pepto Whey Protein or 100% Platinum Whey (Vanilla)
¼ cup (40 g) flaxseed meal (or favourite flour)
½ tsp baking powder
A pinch of ground cinnamon
½ tsp pure vanilla extract
Mix all ingredients in the blender. Cook over medium-high heat. Serve with pecans, maple syrup or Protein Spread.
🍦 VANILLA CREPES
⅔ (60 g) cup ground oats
2 scoops 100% Platinum Whey (Vanilla or Caramel Frappe for caramel flavour)
1 cup (200 ml) milk or almond milk
1 pinch table salt
2 egg whites
1½ tsp coconut oil
Mix all ingredients in the blender. Cook over medium heat. Serve with maple or caramel syrup or Protein Spread.
🌱 4 INGREDIENT VEGAN PANCAKES
1 cup (120 g) all-purpose flour
1-2 scoops Vegan Protein (Vanilla)
1 tbsp baking powder
½ tsp sea salt
2 tbsp maple syrup, stevia or another sweetener
1 cup (200 ml) water
Mix dry ingredients in the blender, add sweetener of choice and gradually add the water. You can add more water to the desired consistency of the batter. Cook over medium heat. Serve with maple syrup.
🍫 CHOCOLATE VEGAN PANCAKES
⅔ cup (60 g) oat flour
2 tbsp white rice flour
1 tbsp almond flour
1 scoop Vegan Protein (Chocolate-Caramel)
1 tbsp cocoa powder
1 tsp baking powder
¼ tsp baking soda
½ cup (100 ml) almond milk
¼ tsp apple cider vinegar
½ tsp vanilla extract (optional)
Mix all ingredients in a mixing bowl. Cook over medium heat. Serve with maple syrup.
